Cucumber Salad with Yuba
This is a very simple and appetizing cold dish. Beancurd sticks (Fuzhu) can be found at all Asian stores. With only a few ingredients and within minutes you can also make this very simple and refreshing salad at home and have it for lunch, dinner or even midnight snack😉
Ingredients
- 1 Cucumber about 500g
- 2 Sticks Yuba
- 3 tbsp Chili Oil
- 3 Cloves Garlic
- 4 tbsp Soy Sauce
- 8 tbsp Chinese Dark Vinegar eg. Chinkiang Vinegar
- 3 tbsp Sesame Oil
Instructions
- Soak the yuba in cool or lukewarm water(do not use hot water) for at least 2 hours, then cut it into pieces
- Smack the cucumber with knife and then cut it into pieces(about 3cm long). Chop garlic finely.
- Bring water to boil, cook yuba for 1 minute, take it out.
- Add the cucumber to a big bowl, add yuba, soy sauce, dark vinegar, chili oil.
- Heat up the pan(medium heat), when the pan is hot add 3 tbsp sesame oil, stir for 30s then pour the garlic over the cucumber, mix everything together
