Cucumber Salad with Yuba

This is a very simple and appetizing cold dish. Beancurd sticks (Fuzhu) can be found at all Asian stores.

Ingredients
  

  • 1 Cucumber about 500g
  • 2 Sticks Yuba
  • 3 tbsp Chili Oil
  • 3 Cloves Garlic
  • 4 tbsp Soy Sauce
  • 8 tbsp Chinese Dark Vinegar eg. Chinkiang Vinegar
  • 3 tbsp Sesame Oil

Instructions
 

  • Soak the yuba in cool or lukewarm water(do not use hot water) for at least 2 hours, then cut it into pieces
  • Smack the cucumber with knife and then cut it into pieces(about 3cm long). Chop garlic finely.
  • Bring water to boil, cook yuba for 1 minute, take it out.
  • Add the cucumber to a big bowl, add yuba, soy sauce, dark vinegar, chili oil.
  • Heat up the pan(medium heat), when the pan is hot add 3 tbsp sesame oil, stir for 30s then pour the garlic over the cucumber, mix everything together
